You will Need:
- 1 Jar of Sun-dried Tomatoes (250gm)
- 1 Cup of thickened cream
- 1 Cup of milk
- 1 Jar of Artichokes (250gm), chopped
- 1/2 Cup of chopped basil
- 250gm pene pasta
- Strain the tomatoes and blend with the thickened cream.
- Spoon mixture into a saucepan on medium heat and stir in milk. Bring to a simmer.
- Add in the chopped artichokes and basil.
- Cook the pasta according to packet, strain and stir the sauce through.
- Lovely with parmesan and chilli on top ( but I add this to every pasta dish I devour!)
