Sundried Tomato

You will Need:

  • 1 Jar of Sun-dried Tomatoes (250gm)
  • 1 Cup of thickened cream
  • 1 Cup of milk
  • 1 Jar of Artichokes (250gm), chopped
  • 1/2 Cup of chopped basil
  • 250gm pene pasta
  1. Strain the tomatoes and blend with the thickened cream.
  2. Spoon mixture into a saucepan on medium heat and stir in milk. Bring to a simmer.
  3. Add in the chopped artichokes and basil.
  4. Cook the pasta according to packet, strain and stir the sauce through.
  5. Lovely with parmesan and chilli on top ( but I add this to every pasta dish I devour!)
