Sometimes I think “I wish I could look good in a bandage dress” …. but then I remember there’s wonderful things like butter, bacon, carbs and syrup!
Here’s a great recipe when you feel like spoiling a loved one… or yourself :D! Just make sure you eat it while still in your pyjamas.
You will need :
- 2 eggs
- 1/2 cup milk
- 2 tbs. maple syrup
- 1 tsp sugar
- 1 cup of strawberries, roughly chopped
- 2 tbs. butter
- 4 thick slices of bread (I used an amazing scone bread from my local baker, delish!)
- 2 tbs mascarpone
- In a medium bowl, beat together the eggs, milk, 1 tbs maple syrup.
- In a medium skillet, melt half the butter over medium heat. Turn the heat down to medium low.
- Dip two pieces of bread (one at a time) into the egg mixture. Let them soak for a couple of seconds so that the mixture has fully coated the bread.
- Carefully place each bread slice on the skillet. Cook the bread over medium heat on one side for roughly two minutes or golden, then flip. Remove and place on a paper towel while you repeat for the next two slices.
- Meanwhile heat a small saucepan on medium heat. Add the strawberries with the sugar and 1 tbs of water. Let it stew for about 5 minutes.
Serve the toast with a spoonful of the strawberries and drizzle with maple syrup. To help balance the sweetness add a spoonful of mascarpone and and salty bacon to the side.
