Kale Pesto

 

 

You will need:

  • 4 cups raw curly kale, stems removed
  • juice and grated rind of 1 lemon
  • 70gm of pine nuts
  • 1/2 cup of olive oil
  • 1/2 cup of grated parmesan cheese
  • pinch of sea salt

Add all the ingredients into a food processor and blend until smooth. Great on so many things! I love it with spaghetti and with fresh crusty bread.
