Serves 1
- You will need:
- 3 stalks of Asparagus
- 1 hard boiled egg, quartered
- 1/2 cup of white cannellini beans
- 1/4 cup of parsley leaves, roughly chopped
- 1/4 cup, crumbled feta cheese
- lemon zest and lemon for squeezing
- Lightly coat your asparagus with olive oil and grill on a hot griddle until tender.
- Roughly chop the stalks into thumb length pieces.
- Toss all the ingredients in a bowl with a dash of olive oil and the lemon juice.
- Season with cracked pepper.
