Asparagus Salad

Serves 1

  • You will need:
  • 3 stalks of Asparagus
  • 1 hard boiled egg, quartered
  • 1/2 cup of white cannellini beans
  • 1/4 cup of parsley leaves, roughly chopped
  • 1/4 cup, crumbled feta cheese
  • lemon zest and lemon for squeezing
  1. Lightly coat your asparagus with olive oil and grill on a hot griddle until tender.
  2. Roughly chop the stalks into thumb length pieces.
  3. Toss all the ingredients in a bowl with a dash of olive oil and the lemon juice.
  4. Season with cracked pepper.
