Found another great use for the chia seeds in my cupboard! I topped my pudding with nectarines, pepita seeds and maple syrup but any fruit/nut combo would be great. Also if you don’t have almond milk – soy or skim milk would work just fine.

If you’re having this one for breakfast it’s best to make it the night before to give the chia time to swell.

Serves 2

Ingredients:

  • 2 tbs chia seeds
  • 1/2 cup almond milk
  • 1/2 cup greek yoghurt (or natural)
  • 1 nectarine chopped
  • 2 tsp pepita seeds
  • 1 tbs maple syrup
  1. Combine chia seeds, almond milk, yoghurt and syrup in a bowl.
  2. Divide amongst two serving bowls (I just used small tumblers)
  3. The next morning top with the fruit and nut of your choice and drizzle with maple syrup.
